A lovely and rarefied take on California Cabernet Sauvignon this wine shows both richness and restraint. The distinctive Ascentia Vineyard characteristics of red cherry, cedar and cigar box are beautifully knit with spicy currant and fragrant gardenia aromatics. The palate shows a lithe, savory profile supported by a framework of toasty oak and well-centered tannins. Decanting or allowing this wine time to breathe will broaden the tannins and the reveals additional nuances of raspberry and mocha.
Ascentia Vineyard’s Cabernet vines produce wines with a flavor and structural profile that is utterly distinct, even within the context of Alexander Valley Cabernet Sauvignon. Rather than jammy blackberry and cassis flavors, Ascentia Cabernet tends toward vibrant cherry and raspberry fruit. This Bordeaux-like structure, consistent from vintage to vintage, and distinct from the winery’s neighboring vineyards, is due to meticulous clonal selection and exacting vineyard practices. To preserve the character and typicity of the fruit, the wine was aged in French oak puncheons, large barrels that slow maturation and decrease the ratio of oak to wine whilst still affording the subtle complexity and profits of barrel aging.
